Sweet potato (Ipomoea Batata)

The amazing Central American root of sweet potato (Ipomoea Batata) or camote as we call it in our country, contains large amounts of starch, vitamins, fiber (cellulose and pectin) and minerals. In Honduras this root can be grown and harvested throughout the year. This beautiful and exotic root is not only a delight but nutritious. Sweet potato exceeds the conventional potato energy wise.
Our sweet potatos contain high amounts of Vitamin A along with high amounts of beta –Carotene which is a precursor for Vitamin A. Vitamin A plays a role in various functions of the human body such as: Vision, gene transcription, immune function, bone metabolism, skin and cellular health. Vitamin A is very good antioxidant. Our sweet potatato also contains pantothenic acid (B-5) vitamin. B-5 provides support in the synthesis of antibodies and iron for our bodies.
Helps alleviate stomach ulcers, gastritis and other gastric problems. Additionally B-5 helps lower cholesterol level in the blood. Sweet Potato also provides vitamin B-6.( pyridoxine) which is an essential vitamin to convert glucose into energy. B-6 vitamin also helps create neurotransmitters, hormones, and red blood cells which are essential for a optimum functioning for our bodies. Vitamin B-1 is a co-enzyme which helps the body convert carbohydrates into energy. Vitamin B-1 also plays a role in the nerve, muscle and heart function. Our sweet potato provides a considerable amount of vital minerals such as iron, calcium, magnesium, manganese, and potassium which are essential for enzyme, protein, and carbohydrate metabolism.
