Adding to the diversification process we are producing four types of sweet potato varieties now. We are now producing Purple skin/ Purple flesh and white skin/ white flesh varieties besides the normal ones which we produce which are Purple skin/ Purple Flesh and White skin/ white flesh .
As part of the diversification process which we are currently embarking on we are now producing Potato Flour and potato based Starch. We are producing for both human consumption and animal consumption. These processes are completely separate and done accordingly to standard good manufacturing Processes.
The Spaguetti squash botanically named as Cucurbita pepo. is a winter type squash. This squash are allowed to mature fully on their vines. They are also known as the Vegetable Spaguetti by other people. According to some sources this was one of the first squashes to become commercially popular in the United States. It is said that they originated in China specifically in the Region of Manchuria. It was in 1936 which the squash under la name of Somen Nankin that Atlee Burpee and Co. brought the squash to North America. They won popularity during World War II when it was used as a substitute for pasta as it was hard to obtain during those times.
This squash provides great amounts of Vitamin A, folic acid, beta-carotene and potassium. Folic acid is globally known to help prevent birth defects on pregnant women. Folate which is also know as Folic acid or Vitamin B9 helps break down protein and create new ones. According to fitness magazines everywhere this acid helps to form new bloods cells throughout the body. Vitamin A is considered a powerful anti-oxidant. Acorn squash ( Cucurbita pep. Var. Turbinata) which is also called in other parts pepper squash or Des Moines squash is a winter squash. The squash is indigenous to North and Central America according to various sources. The squash was introduced to the early European Settlers by Native Americans. The name Acorn does not stick to this squash randomly. If you take notice this squash has a form of an acorn, but a slight bigger.
Squashes are believed to be the oldest cultivated food in North America. Squashes were grown and eaten extensively by the Pueblo tribes of southwestern United States as well as the famous tribes of the Apaches, Hopi , Havasupai, Papago, Pima , Zuni , Navajo and Yuman Tribes. The Squashes shells were also used as water recipients by the native north American Indians, Aztecs and the and Central American Mayans. This squash is a good source of dietary fiber and potassium.
